The present invention relates to a method of preparing a functional fermented product using seaweeds and, more specifically, to a method for preparing a functional fermented product for fat accumulation inhibition and appetite suppression, which optimizes glutamic acid extraction yield of seaweeds by using 50-70% alcohol, and contains high concentration GABA by inoculating lactobacillus and/or yeast to the extract, and fermenting. The fermented product of the present invention prepared according to the preparation method does not contain toxicity to a human body at all, thereby being able to be taken for a long time to be an ingredient of a health functional food. The health functional food inhibits fat accumulation in cells, and has an advantage beneficial to losing weight through a dietary intake control by neural stability.본 발명은 해조류를 이용한 기능성 발효산물의 제조방법에 관한 것으로, 더욱 상세하게는 50 ~ 70% 주정을 이용함으로써 해조류의 글루탐산 추출수율을 최적화하고, 상기 추출물에 유산균 및/또는 효모균을 접종하여 발효시킴으로써 고농도의 가바(GABA)를 함유하며, 지방축적 및 섭취충동 억제용 기능성 발효산물의 제조방법에 관한 것이다. 상기와 같은 제조방법에 따라 제조된 본 발명의 발효산물은 인체에 대한 독성이 전혀 없어 장기적으로 섭취 가능하므로 건강기능식품의 원료로 사용될 수 있으며, 이러한 건강기능식품은 세포내 지방 축적을 억제하고, 신경안정을 통한 식이 섭취조절을 통해 다이어트에 유용한 장점을 나타낸다.
