PROBLEM TO BE SOLVED: To obtain an oil-in-water type emulsion composition having a quite excellent emulsion stability.SOLUTION: In this oil-in-water type emulsion composition consisting of the oil phase wherein, 70 wt.% or more of the constitutional fatty acids contain 15 wt.% or more of diglycerides of unsaturated fatty acides, and the aqueous phase containing water, the oil-in-water type emulsion composition contains the ingredients (I) and (II), wherein (I) is 1.2 to 20 wt.% of a plant sterol, and (II) is 0.1 to 5 wt.% of an emulsifying agent having a 10 or higher HLB value.COPYRIGHT: (C)2003,JPO【解決手段】 構成脂肪酸の70重量%以上が、不飽和脂肪酸であるジグリセリドを15重量%以上含有する油相と、水を含む水相とからなる水中油型乳化組成物において、次の成分(I)及び(II)、(I)植物ステロール 1.2~20重量%(II)HLB値10以上の乳化剤 0.1~5重量%を含有する水中油型乳化組成物。【効果】 本発明の水中油型乳化組成物は、乳化安定性に極めて優れている。
