PROBLEM TO BE SOLVED: To provide L-ascorbic acid-containing powder made from a plant and preserved without oxidation decomposition of L-ascorbic acid for a long period of time.SOLUTION: To solve the problem, a method for producing L-ascorbic acid-containing powder includes drying an L-ascorbic acid-containing fruit to make a dried fruit, processing the dried fruit into dried fruit powder, adding a stabilization solution containing rutin and/or a rutin derivative to the dried fruit powder, and redrying the powder added with the stabilization solution to obtain the L-ascorbic acid-containing powder, and L-ascorbic acid-containing powder obtained by the production method are adopted.COPYRIGHT: (C)2012,JPO&INPIT【課題】長期間、L‐アスコルビン酸が酸化・分解しないように保持することのできる植物を原料としたL‐アスコルビン酸含有粉を提供することを目的とする。【解決手段】上記課題を解決するため、L‐アスコルビン酸を含有する果実を乾燥させて乾燥果実とし、当該乾燥果実を乾燥果実粉に加工し、当該乾燥果実粉に、ルチン及び/又はルチン誘導体を含む安定化溶液を添加し、前記安定化溶液を添加した粉体を再度乾燥させてL‐アスコルビン酸含有粉を得ることを特徴とするL‐アスコルビン酸含有粉の製造方法L‐アスコルビン酸含有粉の製造方法と、当該製造方法で得られたアスコルビン酸含有粉を採用した。【選択図】図1
