PROBLEM TO BE SOLVED: To provide a heat sterilization device enabling pressure control not to deform or break a pneumatic container without having expert knowledge.SOLUTION: This heat sterilization device performs heat sterilization by holding in a sterilization tank, a pneumatic container obtained by sealing vapor phase-containing food in a container, and jetting hot temperature water to the pneumatic container. The heat sterilization device includes a tank temperature detector detecting temperature in the sterilization tank, a tank pressure detector detecting pressure in the sterilization tank, and a tank pressure adjusting device adjusting pressure in the sterilization tank, and performs heat sterilization of an object to be sterilized while adjusting pressure in the sterilization tank.
