The subject of the invention is a process for producing flavoured oysters, comprising carrying out the following steps: - filling a container referred to as flavouring container with sea water, - adjusting the temperature of the sea water of the flavouring container to between 10 and 16°C, - stirring the sea water of the flavouring container in order to cause it to circulate, - adjusting the oxygen saturation of the sea water of the flavouring container to between 50 and 100%, - introducing, to the sea water of the flavouring container, between 0.2 g and 10 g of at least one flavouring per litre of water, in order to obtain a sea water referred to as flavoured sea water, - submerging at least one oyster into the sea water of the flavouring container, - leaving said at least one oyster in the flavoured sea water for 2 to 12 hours, - removing the flavoured oysters from the flavouring container.Lobjet de linvention est un procédé de fabrication dhuîtres aromatisées, comprenant la mise en oeuvre des étapes suivantes : - remplir avec de leau de mer un contenant dit contenant daromatisation, - ajuster la température de leau de mer du contenant daromatisation entre 10 et 16°C, - mettre leau de mer du contenant daromatisation sous agitation pour la brasser, - ajuster la saturation en oxygène de leau de mer du contenant daromatisation entre 50 et 100%, - introduire dans leau de mer du contenant daromatisation entre 0,2 et 10 g dau moins un arôme par litre deau, pour obtenir une eau de mer dite eau de mer aromatisée, - plonger au moins une huître dans leau de mer du contenant daromatisation, - laisser ladite au moins une huître dans leau de mer aromatisée pendant 2 à 12 heures, - sortir les huîtres aromatisées du contenant daromatisation.
