This invention relates to a supercritical carbon dioxide defatted rice capable of being long-term stored and preparation method thereof, comprising performing supercritical carbon dioxide extraction to rice for 2.0-4.5 hours under the pressure from 200 to 300 bars, temperature from 31.25 to 60 DEG C, and flow rate of carbon dioxide from 15 to 25 tons/hour. After the supercritical carbon dioxide extraction, the rice has hexane oil extraction rate from 0.070% to 0.030%. The supercritical carbon dioxide defatted rice prepared by the method of this invention has a stable taste quality better than the commercially available supercritical carbon dioxide treated rice.一種耐長期儲放之超臨界二氧化碳脫脂白米的製備方法,包含將白米於200-300bar的壓力、31.25-60℃的溫度及15-25噸/小時的二氧化碳流量的條件下進行超臨界二氧化碳萃取2.0-4.5小時的時間。經過該超臨界二氧化碳萃取後的白米具有正己烷油萃取率0.070-0.030%。本發明方法所製備的超臨界二氧化碳脫脂白米其食味品質的穩定性優於市售超臨界二氧化碳處理白米。
