PROBLEM TO BE SOLVED: To provide a plastic oil-and-fat composition exhibiting good plasticity, creaming property, heat-resistant shape retaining property and favorable meltability in a mouth, even when the content of saturated fatty acids is 25 to 35 mass%, and to provide a hard stock for producing the above plastic oil-and-fat composition.SOLUTION: The hard stock comprises a fractional soft oil of a transesterification oil-and-fat obtained by random transesterification of an oil-and-fat compound having such a constituent fatty acid composition that the composition contains substantially no fatty acid having less than 16 carbon atoms and contains S, which denotes saturated fatty acids having 16 or more carbon atoms, by 55 to 85 mass% and U, which denotes unsaturated fatty acids having 16 or more carbon atoms, by 15 to 45 mass%.
