PROBLEM TO BE SOLVED: To provide a method for producing a fermented food product, and a suitable processing aid that enables the production of a fermented food product.SOLUTION: Provided are: a method for producing a fermented food product in which a food product raw material is combined with a starter cultured material for fermentation, and in which at least 1 microorganism belonging to the genus Bacteroides having at least a cell surface structure corresponding to a human sugar chain structure and/or at least 1 microorganism is added； and a processing aid and a fermented food product containing respective microorganisms.
