PROBLEM TO BE SOLVED: To provide a method for manufacturing a gel-like food which inhibits the proliferation of heat-resistant microorganisms particularly in the production of a gel-like food and does not affect the flavor of the final product, and to provide the gel-like food.SOLUTION: In the present invention, in the production of a gel-like food, a predetermined amount of glucose and/or fructose is added during a constant-temperature process performed at a temperature lower than a heating sterilization temperature and higher than a coagulating temperature of a gelling agent to be used.
