PURPOSE: A producing method of a salted pollack roe extract, and a composition containing thereof are provided to obtain the salted pollack roe extract containing abundant amount of conjugated fatty acid.CONSTITUTION: A producing method of a salted pollack roe extract comprises the following steps: washing and assorting pollack roe soaking the pollack roe in a seasoning solution including 1-30% of salt, 1-30% of seasoning powder, 1-20% of sorbitol, and 1-20% of alcohol adding red pepper powder, sugar, garlic, and starch syrup to the seasoned pollack roe, and low temperature aging the pollack roe for 1-7 days at 1-20 deg.
