PROBLEM TO BE SOLVED: To provide a baked confectionery baking apparatus that can bake the soft-skinned baked confectionery even if being not trained thoroughly.SOLUTION: Baking plate pairs (1) for baked confectionery concerning the present invention have one and the other baking plates (13) swingably hinged to each other, and recesses (15) provided with at least one by one in each of the facing surfaces of the baking plates. Swing limiting means (21) for forming a desired gap between both facing surfaces is provided between both facing surfaces (13a), when swinging one baking plate to the other baking plate in the closure direction. A gap is made between both facing surfaces by operation of the swing limiting means. As a result, the dough in the recess (15) of one baking plate comes out from the inside of the recess by inertia, and makes landing on the dough in the recess 15 of the other baking plate.
