The present invention provides a method for extracting rutin, a natural dye, from Cudrania tricuspidata, comprising a step of adding an extraction solvent to crushed Cudrania tricuspidata and performing a reflux cooling method or an ultrasound extracting method on the crushed Cudrania tricuspidata, and food comprising rutin, a natural dye, extracted thereby, as an active ingredient. The method for extracting rutin has effects of: extracting a large amount rutin, a natural dye; and solving changes in pigmentation and enhancing stability of the same during a processing process so as to be used effectively in the food processing industry.본 발명은 꾸지뽕(Cudraniatricuspidata) 분쇄물에 추출 용매를 첨가한 후 환류냉각법 또는 초음파추출법을 수행하는 단계를 포함하는 것을 특징으로 하는 꾸지뽕으로부터 천연 색소 루틴(rutin)을 추출하는 방법 및 상기 방법에 의해 추출된 천연 색소 루틴을 유효성분으로 함유하는 식품 조성물을 제공한다.
