The present invention concerns novel strains of Enterococcus faecium and Leuconostoc mesenteroides, collected from freshwater dams in Northern Tunisia, and their phylogenetic, biochemical and in vivo/in vitro potentials, for human and animal uses, as probiotics. Also, this invention relates to antimicrobial activity of such bacteriocin-producing lactic bacteria which can exibit prophylactic effect and give application in minimally-processed foods subjected to moderate heat processing.
