PROBLEM TO BE SOLVED: To provide a method for producing solid matter of a saccharide solution, containing isomaltulose.SOLUTION: There is provided a method in which an enzyme producing isomaltulose from sucrose is applied to a sucrose solution to obtain an isomaltulose-containing saccharide solution so that solid matter is produced from the saccharide solution, and the method includes: heating the saccharide solution to adjust the solid content of the saccharide solution to be 77-96 mass% subjecting the resultant adjusted matter to a crystal nucleation treatment by applying a shear force thereto while maintaining the resultant adjusted matter at 65-120°C and then cooling the treated matter thus obtained.COPYRIGHT: (C)2012,JPO&INPIT【課題】本発明は、イソマルツロースを含む糖液の固形物を製造する方法を提供することを目的とする。【解決手段】本発明は、ショ糖からイソマルツロースを生成する酵素をショ糖液に作用させてイソマルツロース含有糖液を得、当該糖液から固形物を製造する方法であって、当該糖液を加熱して、当該糖液の固形分濃度を77~96質量%に調整すること、上記で得た調整物を65~120℃に保ちながら、せん断力を与えて結晶核を作る処理に付すこと、そして上記で得た処理物を冷やすこと、を含む前記方法を提供する。【選択図】図2
