PROBLEM TO BE SOLVED: To provide a filling containing highly unsaturated fatty acid, in which off-flavor is inhibited from being generated.SOLUTION: A method for manufacturing a filling containing 10 to 35 wt.% of oil and fat in which a total amount of DHA and EPA is 0.01 to 1 wt.%, comprises steps of: mixing raw materials of a filling; subjecting them to heat treatment at 40 to 55°C for 5 to 50 minutes; homogenizing them at 3 to 25 MPa by means of a high-pressure homogenizer; and thermally sterilizing them at 70 to 95°C for 1 to 5 minutes, and in the method, the homogenizing step is not carried out after the thermally sterilizing step.
