PROBLEM TO BE SOLVED: To provide an enzyme responsible for the synthesis of a monoterpene glycoside, which is considered to be a common form as a precursor of flavor components in plants, a transformant into which the gene of such an enzyme is introduced, a method for forming such a transformant, and a method for producing a novel terpene glycoside.SOLUTION: According to the present invention, there is provided an enzyme having glycosidation activity against monoterpene found by co-expression analysis of Arabidopsis thaliana, and, in particular, showing a high specific activity against a substrate having a hydroxy group at the 8-position. There are also provided a transformant into which the gene of such an enzyme is introduced, a method for forming such a transformant, and a method for producing a novel terpene-8-glycoside.
