The present invention relates to an oat pancake mix of high beta-glucan content, and a preparation method of the same. Specifically, the particle sizes of oats having high beta-glucan contents were investigated for developing an oat pancake mix, and it was shown that naked oats 100 mesh and covered oats 60 mesh have the highest beta-glucan contents, and that glycemic index (GI) are low when flour was mixed in the naked oats, and rice powder was mixed in the covered oats. Further, the pancakes were produced using the pancake mix prepared by mixing the oats of high beta-glucan content with cereal powder in various ratios were investigated, and compositions and properties as well as beta-glucan content, gelatination characteristics, glycemic index and palatability of these pancakes were investigated. Thus, it was found that the oat pancake mix produced by combining 40% of the oats of high beta-glucan content has the highest palatability and functionality. Thus, the oat pancake mix of the present invention and a preparation method of the same may be beneficially used as a material for health food products.COPYRIGHT KIPO 2018본 발명은 베타글루칸 함량이 높은 귀리 부침믹스 및 이의 제조방법에 관한 것으로, 구체적으로 귀리 부침믹스 개발을 위해, 베타글루칸 함량이 높은 귀리 입도 크기를 조사한 결과, 쌀귀리 100 mesh 및 겉귀리 60 mesh에서 가장 높은 베타글루칸 함량을 나타내었으며, 쌀귀리에는 밀가루를, 겉귀리에는 쌀가루를 혼합하는 것이 혈당지수(GI)가 낮은 것으로 나타내었다. 상기 베타글루칸 함량이 높은 귀리와 곡물가루를 다양한 배합비로 혼합한 부침믹스를 이용하여 부침개를 제조하고, 이의 성분, 물성 등을 조사하고, 베타글루칸 함량, 호화특성, 혈당지수 및 기호도 등을 조사한 결과, 베타글루칸 함량이 높은 귀리를 40%로 배합하여 제조된 귀리 부침믹스가 기호도 및 기능성이 가장 우수함을 확인함으로써, 본 발명의 귀리 부침믹스 및 이의 제조방법은 건강식품 소재로 유용하게 이용될 수 있습니다.
