The present invention relates to a kneader used for mixing and kneading flour, or the flour and starch powder for noodle, cold noodle, wheat noodle or the like. The present invention provides a kneader having an easily separable axis coupling means capable of simply attaching and detaching an axis coupling means, which supports a kneading screw installed inside a dough container, to and from the dough container without any tool, so as to facilitate cleaning the kneading screw and the inside of the dough container. That is, the kneader comprises: a pair of screws installed inside the dough container to be driven in an opposite direction to each other by a driving assembly embedded in a base unit and the axis coupling means detachably attached to the dough container and supporting a front axis portion of the kneading screw. Two axis coupling means are installed to support the respective kneading screws.
