PROBLEM TO BE SOLVED: To provide an emulsifier for foamable oil-in-water type emulsion composition which is excellent in an effect for improving emulsion stability of a foamable oil-in-water type emulsion composition, heat resistance of whipped cream obtained by whipping the composition, and an effect for improving shape retention.SOLUTION: An emulsifier for foamable oil-in-water type emulsion composition is polyglyceryl fatty acid ester satisfying the following conditions 1 to 3. Condition 1: an average degree of polymerization of polyglycerol is 3 or more. Condition 2: a content of a saturated fatty acid having 16 to 18 carbon atoms in 100 mass% of a constituent fatty acid is 50-85 mass%.
