PROBLEM TO BE SOLVED: To provide mixed flour for baked confectioneries which allows easy production of non-fermentation baked confectioneries having flavor and eating quality like baked confectioneries produced through yeast fermentation, and having an excellent texture in a simple procedure.SOLUTION: The mixed flour for non-fermentation baked confectioneries contains 0.1-4 mass% fermentation species powder in the total mix flour. Dextrin is contained by 1-10 mass%.
