The object of the present invention is to improve flavor of microwave cooking chicken and to provide a flavor-improved microwave cooking chicken.The solution means of the present invention is a composition for improving flavor of microwave cooking chicken comprising a roast flavoring agent and a subsidiary material in which the subsidiary material comprises one or two or more selected from saccharide, glutamine and spices and it comprises at least a saccharide. The composition is used for improving flavor of microwave cooking chicken. A method for improving flavor of microwave cooking chicken comprises contacting a chicken with the said composition and cooking the contacted chicken by a microwave oven.
