PROBLEM TO BE SOLVED: To provide a method for producing an oil-and-fat/carbohydrate powdery raw material by which lipid soluble vitamin or the like can be pulverized so as to physically and chemically stabilize the vitamin to provide an oil-and-fat/carbohydrate powdery raw material enabling food containing the lipid soluble vitamin to be improved in its quality and storage stability, to be inhibited in deterioration in its color, taste and flavor, and to retain its color tone and prolong its shelf life and to provide an applied product containing the material.SOLUTION: The method for producing the oil-and-fat/carbohydrate powdery raw material comprises: mixing lipid soluble vitamin-dispersed oil produced by dispersing the lipid soluble vitamin or lipid soluble vitamin-like substance (such as lipid soluble vitamin) in oil and fat and a lipophilic emulsifying agent, with a carbohydrate water-dispersed solution obtained by dispersing carbohydrate in water and a hydrophilic emulsifying agent to prepare an oil-and-fat/carbohydrate-coated dispersion solution and optionally drying the dispersion solution to produce the oil-and-fat/carbohydrate-coated dispersion solution, or oil-and-fat/carbohydrate powdery raw material.
