The manufacturing method of functional noodles including adlay of the present invention comprises the steps of: manufacturing a mixture for manufacturing noodles by inputting 94-99.9 wt% of wheat flour or grain powder, a main ingredient of noodles, and 0.1-6 wt% of adlay powder in 10-100 mesh into a kneading machine and mixing in order to manufacture noodles manufacturing saline by adding and mixing 1-5 wt% of refined salt to 95-99 wt% of purified water heated at 20-40°C manufacturing a kneading for noodles by inputting 55-80 wt% of the mixture for manufacturing noodles manufactured in the first step and 20-45 wt% of saline manufactured in the second step into a kneading machine, and performing kneading in vacuum while maintaining the vacuum in the kneading machine at 300-700 mmHg (60-460 Torr) manufacturing noodle plates with a predetermined thickness by passing the kneading for noodles manufactured in the third step through a milling roller of a noodle machine manufacturing noodles by cutting the noodle plates manufactured in the previous step at a desired size by using a cutter installed on the end of the milling roller of the noodle machine and drying the noodles manufactured in the previous step by hanging over a drying rod in a drying chamber, cutting at a desired size after drying, and, then, packaging. The functional noodles of the present invention allow general consumers to automatically take adlay components beneficial to the human body while having the functional noodles of the present invention.
