PROBLEM TO BE SOLVED: To provide a solid food product including dry powder of pulp as ingredient, which is well kneaded and formed into a shape with excellent solidity, having a soft texture with the temporal degradation of flavor, appearance such as color, and texture being inhibited.SOLUTION: The solid food product includes dry powder of pulp and glycerol which are kneaded and formed into a pill. Preferably glycerol in an amount of 20 mass% or more and 45 mass% or less is contained. Glycerol allows excellent kneadability to be obtained, so that the content of pulp and water can be reduced. Consequently oxidation degradation caused by the pulp and water can be inhibited, and the solid food product can maintain the excellent flavor, appearance, and texture for a long term.COPYRIGHT: (C)2016,JPO&INPIT【課題】成分として果肉の乾燥粉末を含有し、良好に混錬されて、良好な固形性及び形状を有した状態で製造されるとともに、柔らかい食感を有し、風味、色等の外観、及び食感の経時的な劣化が抑制された固形食品を提供する。【解決手段】固形食品は、果肉の乾燥粉末と、グリセリンとを混錬し、丸剤化してなる。グリセリンを20質量%以上45質量%以下含むのが好ましい。グリセリンにより、良好な混錬性が得られ、果肉及び水分を減じることができるので、果肉及び水分に起因する酸化劣化が抑制され、固形食品は長期的に良好な風味、外観、食感を維持することができる。【選択図】なし
