PROBLEM TO BE SOLVED: To develop a seasoning material for cold, cool Mapo Tofu, obtained by performing some operations without using soup, dogtooth violet starch and fire in the case of making the cool Mapo Tofu so as to produce the taste of the soup and delicious food texture, and capable of being easily prepared by anybody.SOLUTION: The seasoning material for the cool Mapo Tofu which is not at all inferior to the soup is completed by separately seasoning each of the different kinds of meats, fish meats and shell fishes as the materials replacing the taste of the soup, with different tastes, and soaking them in hot taste oil so as to infiltrate the taste of each of the raw materials into the oil.COPYRIGHT: (C)2012,JPO&INPIT【課題】冷たい、クール麻婆豆腐を造るときに、スープを使わず、片栗粉も使わず、火も使わず、どの様な作業をすれば、スープの旨味と、美味しい食感が生まれ、誰でも簡単に造れるクール麻婆豆腐の、調味料の開発。【解決手段】 スープの旨味の替わりになる材料として、素材の違う食肉、魚肉、貝類を、夫々別々に異なる味付けをし、辛味油に漬け込み、オイルに夫々の素材の旨味を染込ませる事により、スープにも勝るとも劣らないクール麻婆豆腐の調味料が完成した。【選択図】なし
