The present invention is related to the food industry in general, it being particularly applied in the food engineering and technology field and the development of novel food products and more specifically the invention referring to a meat analogue the invention is characterized in that it includes a mixture cooked by extrusion, cut and dried and formed by soy flour, a source of protein such as soy isolate or other source of vegetable protein, wheat gluten which besides acting as a second protein source acts as an element for absorbing water, a suitable amount of a raising agent for helping the texturized to be expanded, maize starch as a texture improver, dyes and water.La presente invención está relacionada con la industria alimentaria en lo general, en lo particular cae en el campo de la tecnología e ingeniería de alimentos y del desarrollo de nuevos productos alimenticio y más específicamente se refiere a un análogo de carne caracterizado por una mezcla cocida por extrusión, cortada y secada conformada por harina de soya, una fuente de proteína como aislado de soya u otra fuente de proteína vegetal, gluten de trigo que además de fungir como una segunda fuente de proteína funge como elemento de absorción de agua, una cantidad adecuada de agentes leudantes para ayudar a la expansión del texturizado, almidón de maíz como mejorador de textura, colorante y agua.
