Moreover, during mixing and heating methionine and a sugar, one or more kinds of sodium chloride, potassium chloride, calcium chloride and phosphate is/are added, and the mixture is heated under particular pH conditions for a particular time at a particular temperature.本發明之課題係於利用蛋胺酸與糖的加熱反應製造風味組成物時，提供可使其含有更高濃度之3-甲硫基丙醛(methional)之製造方法，以及含有根據該製造法所製造之組成物之食品等。本發明之解決方式係混合蛋胺酸與糖，再將該混合物以2階段的pH條件，以特定時間、特定溫度進行加熱。另外當混合蛋胺酸與糖並進行加熱時，含有氯化鈉、氯化鉀、氯化鈣、磷酸鹽之至少一種以上，再將該混合物以特定pH條件、特定時間、特定溫度進行加熱。
