PROBLEM TO BE SOLVED: To provide an aqueous solution that contains highly pure saponin of good quality in a high concentration extracted from strained lees of camellia seeds, as a means of more effectively making use of strained lees of camellia seeds.
SOLUTION: The aqueous solution of saponin originating from strained lees of camellia seeds is characterized by comprising saponin extracted from strained lees of camellia seeds by subcritical water under the conditions of a treatment temperature of 100 to 347°C, a treatment pressure of 3.0 to 22.1 MPa, and a treatment time of 1 to 30 minutes. A process of preparing the same is disclosed.
