PROBLEM TO BE SOLVED: To provide a plant processed food which is highly palatable because of its fully imparted aging flavor.
SOLUTION: The plant processed food of the present invention is characterized by containing 3-methyl-1-butanol. It is desirable that the concentration of 3-methyl-1-butanol is 0.5 to 10 ppm, based on the mass of food, and it is possible to impart and enhance aging flavor without fail so far as the concentration falls within this range. It is also possible to form 3-methyl-1-butanol in a plant processed food by fermenting a plant with lactic acid bacteria having the ability to produce 3-methyl-1-butanol.
