To provide a method for producing a dried meat processed product having excellent restorability even when the product has a thickness and a cubic volume larger than those of a currently used product, and to provide a dried meat processed product.SOLUTION: A method for producing a dried meat processed product having excellent restorability includes: (a) a step of cooking pasty, minced or cut processed meat followed by subjecting to protein denaturation; (b) a step of bringing the processed meat after protein denaturation into contact with liquid in reduced pressure so as to impregnate the inside of the processed meat with the liquid; and (c) a step of freeze-drying the processed meat after liquid impregnation.
