PROBLEM TO BE SOLVED: To provide fat-reduced soybean protein which is reduced in fat by efficiently separating the fat from fat-containing soybean without relying on an organic solvent: and to provide a novel fat-enriched soybean material.

SOLUTION: The fat-reduced soybean protein material contains protein and carbohydrate at a total content of≥80 wt.% in terms of dry matter, contains campesterol and stigmasterol as plant-derived sterol at a total content of≥200 mg relative to 100 g of the fat (as an extract from a chloroform/methanol mixed solvent), and has an LCI value of≤40%. A soybean emulsion composition contains protein at a content of≥25 wt.% in terms of dry matter, contains fat at a content of≥100 wt.% in terms of dry matter relative to the content of the protein in terms of dry matter, and has an LCI value of≥60%.
