The present invention is related to a novel process of preparing cold extrudates from the minor millets and tubers comprising of steps of the preparing dough from flour of millets and mash of boiled tubers, steaming the dough, kneading of dough to form granules using pasta machine and extruding it using the machine into flat strip shaped cold extrudates and preparing ready-to-eat food products thereof by microwave puffing process that comprising of convective heating of cold extrudate and subsequently microwave heating of cold extrudate to puff it and if required oven toast it. The product derived from the novel process of cold extrusion and microwave puffing has good expansion ratio and appealing brown colour, good hardness and crispness with low fat contents and bearing nutritional contents borne by basic ingredients. The process is useful at domestic level. The process of the invention is simple and cost effective and yields the food product suitable for human consumption.
