Present invention discloses reconstituted rice grains obtained from broken rice-kernel. More specifically, the reconstituted rice grains of the present invention are obtained from broken rice kernel as a raw material without any external additives and involving extrusion process, based on the temperature and shear under which extrudates are generated underoptimized process parameters. Advantageously the reconstituted rice grains of the invention are provided to have the shape of the conventional rice, along with cooking and sensory qualities to match conventional rice.
