PROBLEM TO BE SOLVED: To provide a method for producing cotton bean curd, by which, while using a punching metal mold, a whey layer is disposed between a punching plate lid and raw material bean curd to improve peelability, thereby enabling to prevent the adhesion of the cotton bean curd to the punching plate lid.SOLUTION: The method for producing the cotton bean curd includes mounting a punching thrown plate lid 2 on an upper opening 10 downward directed by vertical inversion, supplying the raw material bean curd T in the formed cylindrical mold 1, mounting a punching lower plate lid 3 on an upward-directed lower opening 11, vertically inverting the cylindrical mold, replacing the punching thrown plate lid by a punching upper plate lid 4, pressing, removing the punching upper plate lid, and then taking out the pressed cotton bean curd T2 from the cylindrical mold.COPYRIGHT: (C)2011,JPO&INPIT【課題】 パンチングメタル製の成形型を使用しながら、パンチング板蓋と原料豆腐との間にホエー層を設けさせ、剥離性を向上させてパンチング板蓋に木綿豆腐が付着するのを防止させることができる木綿豆腐の製造方法の提供。【解決手段】 上下反転して下向きになった上面開口部10にパンチング捨板蓋2を装着させた筒状型1の内部に原料豆腐Tを供給させ、上向きになった下面開口部11にパンチング下板蓋3を装着させる。次に、筒状型を上下反転させ、パンチング捨板蓋をパンチング上板蓋4に取替えたのちプレスさせる。その後、パンチング上板蓋取り外し、プレス後の木綿豆腐T2を筒状型の内部から取り出す。【選択図】 図1
