PROBLEM TO BE SOLVED: To provide a yeast that accumulates ornithine at a high concentration and selection methods thereof as well as methods for producing alcoholic beverages and food and drinks containing ornithine in plenty using the yeast of high ornithine accumulation, where ornithine supports liver functions.SOLUTION: Yeast strains accumulating ornithine at a high concentration are obtained as follows: a parent strain of Saccharomyces cerevisiae is mutated to select strains that can grow on a selection medium containing azetidine-2-carboxylic acid, from these azetidine-resistant strains, strains accumulating more proline compared with the parent strain are selected, from the proline-accumulating strains, strains having higher alcohol resistance than the parent strain are selected, and finally strains capable of producing much more ornithine in comparison with the parent strain are selected and isolated from the ethanol resistant strains. Using the yeast strains, alcoholic beverages and food and drinks are produced.SELECTED DRAWING: Figure 3COPYRIGHT: (C)2016,JPO&INPIT【課題】肝臓の働きを助けるオルニチンを親株より多く細胞内に蓄積できるオルニチン高蓄積酵母及びその選抜方法を提供する。さらに当該オルニチン高蓄積酵母を用いて、オルニチンを多く含む酒類及び飲食品の製造方法を提供する。【解決手段】サッカロマイセス・セレビシエ(Saccharomyces cerevisiae)に属する酵母を変異処理し、アゼチジン-2-カルボン酸を含有する選択培地で生育する菌株から、親株よりもプロリンを多く蓄積することができる酵母を選択し、さらに親株よりもエタノール耐性を有する酵母を選択した菌株から、前記親株より多くオルニチンを生産することができる酵母を選択分離し、その酵母を用いてオルニチンを多く含む新たな酒類及び飲食品を製造する。【選択図】図3
