The present invention relates to a manufacturing method of sugar using rice; and to the sugar using rice. More specifically, the manufacturing method of sugar using rice comprises the following steps: adding water and a liquid enzyme to wet rice flour and making the water, the liquid enzyme and the wet rice flour react; adding malt to a reaction product obtained in the previous step and saccharifying the reaction product; and granulating grain syrup obtained by saccharifying the reaction product. According to the present invention, rice is used as an ingredient for sugar so the consumption of rice is promoted and farm incomes are increased. In addition, sugar is manufactured by massively producing grain syrup with wet rice flour and granulating the grain syrup. Accordingly, sugar production costs are reduced, and dependence on sugar imports is reduced. Furthermore, the sugar using rice prevents adverse effects caused by deficiencies in vitamins and minerals in sugar.본 발명은 쌀 설탕의 제조방법 및 그 쌀 설탕에 관한 것으로, 더욱 상세하게는 습식 쌀가루에 물, 액화효소를 투입하여 반응시키는 단계와, 상기 반응시킨 반응물에 엿기름을 투입하고 당화시키는 단계와, 상기 당화시킨 조청을 과립화하는 단계를 포함하는 것을 특징으로 한다.본 발명에 의하면 설탕의 원료로서 쌀을 이용함으로써, 쌀의 소비를 촉진하여 농가소득을 늘리는 효과가 있다. 또한, 습식 쌀가루를 이용하여 조청을 대량 생산하고, 이를 과립화하여 설탕을 제조함으로써, 설탕의 제조비용을 낮추는 것은 물론, 설탕의 수입의존도를 낮추는 장점이 있다. 아울러, 비타민과 무기질의 부족으로 인한 설탕의 악영향을 방지하는 효과가 있다.
