The present invention is related to the food industry and technology in general and particularly to the industry for manufacturing food and mainly to the composition of a healthy, not fried snack with a high nutritional value, and the process for manufacturing the same this invention is characterized in that it consists of a mixture of cereal flours and/or starches vegetable and/or animal isolated proteins dehydrated fruits and/or vegetables grains or seeds and vitamins, minerals, seasonings (mixture of spices and chilies) flavours, salt and/or sugar or sugar substitute the mixture is pre-conditioned with water or water steam at a humidity of from about 15% to about 25%, cooked by extrusion, and finally dried at a humidity of about 10% and cut in predetermined shapes.La presente invención está relacionada con la industria y la tecnología de alimentos en los general en lo particular se refiere a la industria de la manufactura de alimentos y más específicamente a una composición de una botana no frito, saludable y con alto valor nutrimental, y al proceso de elaboración del mismo caracterizada porque consta de una mezcla de harinas y/o almidones de cereales aislado de proteínas vegetales y/o animales vegetales y/o frutas deshidratadas granos o semillas y vitaminas, minerales, condimentos (mezcla de especias y chiles) sabores, sal y/o azúcar o sustitutos de azúcar pre-acondicionada con agua o vapor de agua a una humedad de entre 15 a 25%, cocido por extrusión, secado final a una humedad =10% y cortado en formas predeterminadas.
