PROBLEM TO BE SOLVED: To provide an enzymatic decomposition product of cereal having unique function and produced by treating cereal with a plurality of enzymes under pressure at a high temperature and provide a method for producing an enzymatic decomposition product of cereal and a functional article.
SOLUTION: The enzymatic decomposition product of cereal is produced by reacting cereals under pressure at a high temperature with at least two kinds of enzymes having different substrate specificity and reaction rate. Examples of preferable embodiments of the invention are those that the cereal is selected from rice, barley, wheat, rye, oat, adlay, Chinese millet, foxtail millet, Japanese barnyard millet, corn, sorghum, adzuki bean, soybean, field bean, mung bean and buckwheat, and that the cereal is adlay and the enzymatic decomposition product of adlay has one or more actions selected from melanogenesis suppressing action, epidermal keratinocyte proliferating action and moisturizing action.
