The present invention relates to a food forming extruder for obtaining food having a multi-layered stacking structure, and a forming method for obtaining multi-layered food by providing main ingredient contents and sub ingredient contents as different materials by using the food forming extruder. Recently, children and youths prefer western fast food, such as pizza, hamburger, fried chicken, etc. However, rice cake soup, stir-fried rice cake, pounded rice cake, etc. that are traditional Korean food are inferior to western fast food in terms of taste, shape, processability, etc. Despite its unique texture and excellent nutrition, the traditional Korean food is inadequate to commercialize all over the world, and does not meet a rice consumption policy. The present invention is a technical concept for providing an extruder for forming food having a multi-layered structure while maintaining a desired shape and form without a collision between the main ingredient contents and the sub ingredient contents by allowing the main ingredient contents and the sub ingredient contents to escape from an end plate of a discharge unit and to meet each other after a release of pressure, when the sub ingredient contents surrounded by the main ingredient contents of the food are inserted into one side of the discharge unit of the extruder to be discharged, in a structure that the main ingredient contents for forming an outer layer of the food are inserted into the extruder from a raw material supply unit and then are pushed out by a screw to be transported to an end portion of the discharge unit of the extruder.본원은 다층의 적층구조를 갖는 식품을 얻기 위한 식품성형용 압출기 및 상기 식품성형용 압출기를 이용하여 주원료내용물과 부원료내용물이 서로 다른 재료로 제공되어 다층구조를 이룬 식품을 얻기 위한 성형방법에 관한 것이다.최근 피자, 햄버거, 치킨 등 서구식 간편식은 유소년 층, 청년층에서 선호되고 있으나 우리나라의 전통음식인 떡국이나 떡볶이, 절편 등은 맛, 형상 및 가공성 등이 뒤떨어지므로 그 독특한 조직감 및 영양성의 우수함에도 불구하고 세계적인 상품화가 미흡한 실정이고, 쌀 소비 정책에도 부응하고 있지 못하고 있다.본원은 식품의 외부층을 형성하는 주 원료내용물이 원료공급부로부터 압출기로 내삽된 후 스크류에 밀려 압출기의 배출부단부로 이송되는 구조에서 식품의 주원료내
