PROBLEM TO BE SOLVED: To provide barley tea-like extract produced based on finding out what condition enables production of well-flavored and strongly-antioxidative extract so as to verify components of the extract, favorable condition for manufacturing the extract, and nature and usability of the extract.

SOLUTION: The extract rich and having barley tea-like or coffee-like flavor is obtained by adding 3 pts.mass of water to 1 pts.mass of raw barley, and treating the mixture at 140-290°C under 3.8-6.6 air pressure for 4-6 min in subcritical condition. The extract has good flavor, contains HMF having strong antioxidation at high concentration as a healthy functional component. The extract is efficiently produced from &beta-glucan characteristically contained much in barley via the subcritical treatment.
