PURPOSE: A chicken cuisine and a producing method thereof are provided to use Cudrania tricuspidata for improving the taste, the smell, and the color of the cuisine. CONSTITUTION: A producing method of a chicken cuisine comprises the following steps: boiling main ingredients including 100 parts of chicken meat by weight and 10-20 parts of Cudrania tricuspidata by weight in a container with water; separating solid parts from the container; and adjusting the saltiness of the mixture remaining in the container. The chicken cuisine is selected from chicken soup, spicy chicken soup, chicken stock, or chicken noodle soup.
