The present invention relates to a method for processing Angelica gigas Nakai using hot melt extrusion, and an Angelica gigas Nakai colloid dispersion produced by the processing method. Specifically, the present invention relates to a method for processing Angelica gigas Nakai, comprising the following steps: (1) cutting Angelica gigas Nakai to size of 3-5 mm and drying the same to make moisture content to reach 20-80%； (2) adding a solubilizing agent and a pH adjusting agent to the dried Angelica gigas Nakai, and the mixing the same； and (3) after the step (2), hot melt extruding the same using a melt extruder to produce the colloid dispersion.본 발명은 열용융 압출을 이용하는 당귀의 가공방법 및 이의 가공방법으로 제조된 당귀 콜로이드 분산체에 관한 것으로, 상세하게는 (1) 당귀(Angelica gigas Nakai)를 3~5mm의 크기로 절단하고, 함수율이 20~80%가 되도록 건조하는 단계； (2) 상기 건조한 당귀에 가용화제 및 pH 조절제를 첨가하여 혼합하는 단계； 및 (3) 상기 단계 (2) 이후에, 용융압출기를 이용하여 열용융 압출하여 콜로이드 분산체를 제조하는 단계；를 포함하는 당귀의 가공방법에 관한 것이다.
