PROBLEM TO BE SOLVED: To provide a method for developing red color in raw crustaceans such as shrimp and crab having a carotenoid dye without heating the crustacean, and giving raw crustaceans having excellent taste and palatability compared with conventional color-developing methods.SOLUTION: The method for color-development of crustaceans to develop red color in a carotenoid dye comprises the treatment of a crustacean such as unshelled or shelled shrimp and crab with an alkaline aqueous solution having pH of 9.5-14.
