PROBLEM TO BE SOLVED: To provide a powdered oil and fat which hardly exudes the lipid to the powder surface, can be left without deteriorated taste and lowered solubility, and can be mixed homogeneously to bring no aggregate even if added in the powder form as it is.SOLUTION: The powdered oil and fat comprises a high-protein fine powder adhered to a powder obtained by drying an emulsion solution, wherein the high-protein fine powder, 60% by weight or more of which has a particle size of 1 &mum or more and 15 &mum or less, has a protein content of 70% by weight or more and a lipid content of 10% by weight or less in the constituent.COPYRIGHT: (C)2002,JPO【課題】 粉末油脂中の脂質が粉末表面に溶出することの少ない、風味劣化や溶解性の低下がなく、粉末のまま添加しても、凝集せずに均一混合できる粉末油脂を提供することを目的とする。【解決手段】 乳化液を乾燥した粉末に蛋白質含量が70重量%以上かつ、脂質含量が10重量%以下である組成であって、1μm以上15μm以下の粒子径のものを60重量%以上含む高蛋白微粉末を付着させることにより上記課題を解決する。
