A water droplet is attached onto the surface of a protein powder 10 which has been leveled off, and the contact angle is measured. The contact angle is measured from a time point at which the water droplet comes into contact with the protein powder 10, and it is determined whether or not the contact angle becomes 90 DEG or less within 60 seconds. A protein powder 10 on which the contact angle becomes 90 DEG or less within 60 seconds is evaluated as a protein powder which is easy to eat without water.本發明提供一種可增多蛋白質之攝取量之蛋白質粉末、含蛋白質之組合物、食品之製造方法、蛋白質粉末之製造方法、含蛋白質之組合物之製造方法、蛋白質粉末之評價方法、及含蛋白質之組合物之評價方法。使水滴附著於成為刮平狀態之蛋白質粉末10之表面而測定接觸角。自水滴與蛋白質粉末10接觸之時點起測定接觸角,判定在60秒以內是否顯示90°以下。將接觸角在60秒以內顯示90°以下之蛋白質粉末10評價為在無水之情況下容易食用之蛋白質粉末。
