PROBLEM TO BE SOLVED: To provide a taste improver which is added to food, in particular to vegetable oil and fat-containing food, and further to baked confectionery required to be baked to remarkably exhibit fat feeling inherent in animal oil and fat typified by butter, impart moderate delicious taste, bodily taste and voluminous feeling, and also add excellently sharp taste when taken.SOLUTION: The taste improver includes mixed diglyceride obtained by mixing diglyceride comprising a relatively short-chain fatty acid with diglyceride comprising a relatively long-chain fatty acid at a specific ratio. A spice composition including the taste improver is provided. Food containing the taste improver or the spice composition is provided.
