Disclosed are a device and a method for roasting grain which can prevent grain from burning in a grain roasting step. The device for roasting grain comprises: a plurality of agitation tanks to roast grain in steps； a measuring unit installed on the agitation tanks to measure temperatures and time of the agitation tanks； an agitation unit installed in the agitation tanks to transport grain in a specific direction； a connection part to connect gaps between the plurality of agitation tanks； a temperature control part arranged on the plurality of agitation tanks and connection parts； and a control unit to control the measuring unit, agitation unit, and temperature control part. The plurality of agitation tanks include: a preprocessing agitation tank to adjust grain to a specific humidity； a roasting agitation tank to roast grain adjusted to the specific humidity at a specific temperature for a specific period； and an aging agitation tank to age grain roasted in specific conditions at a specific temperature for a specific period. Therefore, grain is not overheated in a grain roasting process to prevent grain from burning.곡물을 볶는 단계에서 곡물이 타버리는 현상을 방지할 수 있는 곡물 볶음 장치 및 방법이 개시되어 있다.이 개시된 곡물 볶음 장치는 곡물을 단계별로 볶는 다수 개의 교반조와； 교반조에 설치되어 교반조의 온도와 시간을 측정하는 계측 유닛과； 교반조 내부에 설치되어 곡물을 특정 방향으로 이송하는 교반 유닛과； 다수 개의 교반조 사이를 연결하는 연결부와； 다수 개의 교반조와 연결부에 각각 배치되는 온도 조절부와； 계측 유닛, 교반 유닛 및 온도 조절부를 제어하는 제어부를 포함하며, 다수 개의 교반조는 곡물을 특정 습도로 맞추기 위한 전처리 교반조와； 특정 습도로 맞추어진 곡물을 특정 온도에서 특정 시간 동안 볶는 로스팅 교반조와； 특정 조건으로 볶아진 곡물을 특정 온도에서 특정 시간동안 숙성하는 숙성 교반조를 포함한다.따라서 곡물 볶는 과정에서 곡물이 과열되지 않도록 하고 이에 의해 곡물이 타버리는 현상을 방지할 수 있다.
