PROBLEM TO BE SOLVED: To provide a method for increasing concentration of a novel substance (curcumin 2) which inhibits beta-secretase activity by improving a cultivation method, thereby solving a problem that content of the substance in plants originated from nature is low, and also provide dementia-preventing food in which dissolubility of the substance is enhanced and internal absorption rate to the body is increased for putting it to practical use as dementia-preventing food, thereby solving a problem that the substance is very low in dissolubility to water.SOLUTION: Especially a plant cultivation method is improved in which lowest temperature and a temperature difference are controlled, to increase content of a novel substance (curcumin 2) which inhibits beta-secretase activity.
