1. An iron-rich food product containing an iron source product, an iron source product is obtained by a process comprising the following steps:! The iron-fortified food product according to claim 1, wherein the core is obtained by depositing at least one water-soluble alginate salt on the surface of the particles of at least one iron salt. ! 3. Iron-fortified food product according to claim 1, in which! (i) the core is formed by dissolving or suspending at least one bioavailable iron salt in an aqueous solution of at least one alginate salt to form a gel,!
