To provide a polished barley product whose acid smell peculiar to cooked polished barley is removed by alkali treatment and a cooking method of boiled barley-blended rice.
SOLUTION: (1) The alkali treated polished barley features the addition of an alkaline material to the polished barley for the purpose of ameliorating the flavor of the polished barley product and (2) the alkali treated polished barley product features the coating of the surface of the polished barley with an alkaline material. (3) This boiled barley-blended rice cooking method is characterized in that the polished rice is appropriately blended with the polished barley and then the alkaline material is added to the blend and the blend is cooked. The addition of the alkaline material is controlled so that the pH value of the blend after cooking is set at 5.0 to 7.5.
